Our semi-firm Cheese is bathed for seven days in red wine. This cheese develops a gorgeous crimson edible rind, with a creamy, pale yellow interior. As the cheese ages, a complex and balanced earthy flavor comes through. This cheese melts and slices beautifully. Try it melted into a fondue and serve with crusty bread and slice vegetables.
